I’ve been feeling pretty uninspired lately. Not for a lack of food ideas, heck no, these banana nutella fudgesicles were inspired by a recent post I saw on foodgawker. I’ve got nine recipes in my drafts lined up for you, but a bout of writer’s block has started to nestle in and I can’t seem to find much inspiration to write something with the recipe. Some of my less inspiring but still delicious posts to come include the watermelon salad you might have seen come up on my instagram and some of breakfast items that are packed full of protein to start your day.

It’s been about a year and a half since I posted my favourite red velvet cake recipe on Je suis alimentageuse. Since I’ve found that recipe, I use it for my cake pops and truffles not only in red, but also in purple. It is the most well received cake recipe that I have, being both subtle in flavour, as well as a light, fluffy cake that works amazingly with the cream cheese icing. But ever since I discovered the “evils” of food colouring, I have been hesitant to use food colouring ever since. Of course, every now and then, I succumb to the needs of having brightly coloured food, but I wanted to find a recipe for natural red velvet cupcakes made with beets, which surprisingly, was really hard for me to do.

If you’ve been following my blog at all, you may have been made aware that soup is pretty much my favourite form of food. Not just any soup though, I have a weird preference for puréed soups. Minestrone? Bleh. “Chicken” Noodle? (well, veg broth noodle) On occasion, sure. But creamy butternut squash, cauliflower, or kale and spinach? Oh yes please.  This creamy, roasted tomato and mushroom soup is the perfect consistency of your childhood favourite. Creamy and flavourful with a robust umami flavour from the roasted mushrooms, this soup is full of of nutrients and minerals that are a great remedy for the common cold, a rainy day, or just a day where you crave something hot and delicious. And the best part of this soup is the fact that it’s totally vegan! You wouldn’t know it based on the pale, orange colour and the creamy texture, but there is no cream whatsoever!

I have been craving popcorn chicken since the minute I went vegetarian. I was never a big fan of KFC, but popcorn chicken, YUM. It’s like the best part of KFC with a smaller chicken ratio! So when I saw this recipe for vegan popcorn chicken on Pinterest, I knew I had to have it. Finding soy chunks or TVP was hard in Toronto, because most people don’t really know what it is. I checked the organic/health food section and got nothing. I checked my local health food store and got nothing. Finally, one day I was perusing the grocery store for meal ideas and I saw a bag of soy chunks in the ethnic food section. SCORE.

It’s been so nice outside for the past while that it reminds me how much I like summer. Despite the allergies, the humidity, and the sweaty people, I quite like this season. Apparently we decided to skip spring all together and just leap into summer (climate change, anybody?) because the weather has been yo-yoing between being 22 degrees and being 12 degrees. Both temperatures are nice on their own, but having to switch from pants to shorts and tank tops to thick sweaters in the same day is not cool.

Before I get into these AMAZING strawberry raspberry popsicles, I want to discuss my weight issues. People always ask me how I’m not a whale despite making and blogging all my food and desserts. I’m not “fat”, nor am I “skinny”; I’m just your average-sized-grad-student. (I’m using quotation marks because I think terms like “skinny” or “fat” are words that have too much cultural significance. People get offended so quickly and honestly, people are people. They come in different shapes and sizes. Their size doesn’t make me like or dislike them.) Anyway, Wiifit always depicts me as overweight because I weigh more than your average 5’5″ person, but I attribute that to my muscle mass. I don’t really exercise regularly, but I like to do yoga and zumba, play some volleyball, and go for the occasional swim. I wouldn’t say that I’m necessarily lazy, I just have a huge aversion for being sweaty (even though I like hot yoga more than any other yoga) and I have asthma that acts up in cold weather, hot weather, and when I exercise.

So earlier this week I posted the Vietnamese vegetarian dipping sauce that I use on any Vietnamese dishes that traditionally call for   nước mắm (fish-based dipping sauce). One of those dishes is typically bún thịt nướng với chả giò (rice noodles with grilled pork and spring rolls), and since I don’t really like eating fake meat, I decided to just go with vegetarian spring rolls.

People always ask me how I have the time or money to make and eat the food on my blog. First of all, being vegetarian means that I save a lot of money because I don’t buy any meat, and beans and tofu are fairly cheap. Second of all, student discounts at grocery stores are awesome. But I try to buy my foods in bulk, and if I do splurge on food, I splurge on high quality foods that I know are good for me and delicious, such as condiments like olive or coconut oil, treats like dark chocolate (organic and fairtrade when possible), fruit, and vegetables.
