I’m alternating the “Happy” and “healthy” of H&H Saturdays. Last week was happy, so this week is healthy! Healthy for me ties in with my vegan, plant-based and whole foods type approach. But we gotta leave room for dessert. So in my search for festive vegan treats, I found out that sprinkles are not vegan. I’m not the biggest fan of sprinkles, but they’re great for adding a little sparkle and pizzazz to cookies, cakes and cake pops. So instead of my original idea of something cute and sprinkled for Valentine’s, I made these vegan red velvet crinkle cookies.

First off, I recently learned that the sprinkle candy things in Candy Crush Saga are called colour bombs. My brother always called them cake pops, so I made some Candy Crush sprinkle cake pops for his birthday.

Secondly, some of you may have noticed that I missed both my Thursday and my Monday post. It’s going to get a little ranty as you read along, but essentially, I decided to realign my priorities and actually stop procrastinating school to do some work. I got a little overwhelmed and I had to step back. Sometimes it’s hard to remember to do that. Being so excited to share my baking adventures with all of you, I get so caught up in it that I forget that I have a life outside of this blog. Sometimes people underestimate what it’s like to have the life of a student.

It’s been about a year and a half since I posted my favourite red velvet cake recipe on Je suis alimentageuse. Since I’ve found that recipe, I use it for my cake pops and truffles not only in red, but also in purple. It is the most well received cake recipe that I have, being both subtle in flavour, as well as a light, fluffy cake that works amazingly with the cream cheese icing. But ever since I discovered the “evils” of food colouring, I have been hesitant to use food colouring ever since. Of course, every now and then, I succumb to the needs of having brightly coloured food, but I wanted to find a recipe for natural red velvet cupcakes made with beets, which surprisingly, was really hard for me to do.
