I have a vendetta against store-bought cookies. I don’t usually like them. I used to, that is, before I experienced the deliciousness that is making your own cookies. Cookies fresh from the oven, gooey…chewy… there’s nothing quite like it. Especially not compared to their store-bought counterparts, which are usually either crunchy and crumbly, or too sweet and almost soggy. I love me some chewy, oatmeal cookies, and this recipe nails it.

At every holiday season, I always draw a blank whenever I need  ideas for holiday-baking. I had almost nothing for Valentine’s, but immediately after, I though UGH I want to make lava cakes. Those are totally Valentine’s-y. Also I want to make chocolate bonbons. That would have been GREAT for Valentine’s. Finally I have made something that can be sort of St. Patrick’s day related, unlike my somewhat holiday-reference fail from last year. I mean it was delicious. Um so in the past few days, something has pretty much changed my life a second time around. No, it is not a profession of my love of peanut butter, although let’s be real, I’m pretty sure peanut butter would be my second favourite food over rice. (I just realized that this post is about something that is literally peanut butter over rice). It changed my life when I was around 14, shifting me from the stereotypical asian who liked math (and got the Math Award…and Art Award funnily enough after graduating grade 8) to someone who fell in love with words.

Chris’ mom sends him these amazing care packages with lots of goodies, including these bad boys. I’m 90% sure these are his favourite cookies, and I definitely can see why. They’re a very light, spongey and addictive cookie. The sour cream adds a softness and texture like no other cookie you’ve had before. It’s like you’re eating a cloud. Chris and I would wolf these cookies down as soon as they came in, and then we’d eat the cheese sticks, and then the nuts and bolts. I’m participating in The Great Food Blogger Cookie Swap and these are the cookies I sent out!

Salted Double Chocolate Cookies

Have I ever told you folks why I bake? I bake because it’s how I deal with stress. It’s funny, you’d think that if I had all the time in the world, I would bake more. That’s actually when I bake the least. Now that I’ve graduated, I’ve had a bit of a hard time trying to find a job. With a degree under my belt, I was gung-ho about becoming a real, live, paid translator. But alas, everybody needs 3-5 years experience and frankly, I’m fresh out of university and I’ve only got about a year or two’s worth. So all this running around trying to find work is making me feel a might stressed, so I bring you cookies! These were inspired by Accidentally Domesticated’s post on Dark Chocolate Cookies. Her cookies looked so freaking good I had to try a batch myself. These cookies are almost like brownies, except with lovely surprise pockets of salty goodness.

Hazelnut Nutella Macarons

Nutella is delicious and it’s basically a ganache, so why not smush it between two hazelnut cookies? HAZELNUT HEAVEN! I love hazelnuts, they have this lovely flavour that is 100x better when paired with chocolate. However, I think I may be allergic to raw/whole hazelnuts in large quantities because it started to make my throat kind of itchy. Also, since they seem a bit more dense than almonds, they didn’t rise as well. They were also crispier than my normal macs, but that’s okay, because they softened after being in the fridge overnight.

Salted Caramel Macarons

DAY FOUR OF MACARON WEEK!
This batch of macarons went beautifully! This flavour is probably my second favourite flavour. It was my favourite until I made the raspberry chocolate ones. Goodness gracious. But anyway, only four of these cookies cracked! So many cookies to eat! I attribute it to one of my new friends, Allan, who is currently studying at Le Cordon Bleu. He came to help me with macarons and his magical sugar expertise! This batch of buttercream was EXTRA buttery but it was amazing. I also recently bought fleur de sel imported from France, so the next time I want to make caramels with fleur de sel, they’ll be extra classy.
