It seems like this week is a week of giveaways! To celebrate Ashton’s Birthday (from Something Swanky), she’s organized a MASSIVE giveaway that’s somehow even bigger than the one I posted on Monday. I’ve also decided to share some avocado fudge brownies because they’re magically dense, fudgy, and everything I’d ever wanted from a brownie. And it’s an excellent way to sneak in fruit into your kidlet’s dessert.
Now some of you may be thinking, eeeww what if it tastes like avocado?!
Let me assure you, you don’t taste the avocado.
You do however, FEEL the avocado.
But considering the avocado just makes the brownie a smooth, fudgy, dream in your mouth? I’m totally a-ok with it.
I saw these brownies on Averie Cooks and I was immediately disconcerted because they were blue. BLUE BROWNIES? But don’t be alarmed, as you can see in my photo above, they are not blue. But her photos generally have that kind of hue to them, so I think she kept the photo consistent with the colours of her other photos so it kind of makes sense. I also didn’t use special dark chocolate powder, I just used chocolate powder… because my logic behind that is chocolate powder is 100% cocoa. Dark chocolate bars are generally 60% cocoa, so chocolate powder is the ultimate form of cocoa…? It’s already super dark, no?
Hm.

Avocado Fudge Brownies

Ingredients

- 1 medium avocado, pitted, peeled, and puréed
- 1/4 cup melted butter
- 1 egg
- 1 cup white sugar
- 1/2 cup brown sugar, packed
- 2 tsp instant coffee granules
- 2 tbsp hot water
- 3/4 cup cocoa powder (natural, I haven't tried dutch-processed with this recipe before)
- 1/4 cup flour (use gluten-free flour if you want to keep it GF)

Instructions

  1. Preheat the oven to 350F and line an 8x8 pan with parchment paper with some overhang (to pull out later)
  2. Mix the puréed avocado, white sugar, brown sugar, melted butter (but cooled), and the egg together until it is incorporated.
  3. Mix together the hot water and coffee powder together until the granules have dissolved
  4. Add the coffee mixture, cocoa powder, and flour to the avocado mixture and mix until the mixture is uniform.
  5. Transfer the batter to the prepared 8x8 pan, and bake for 35 minutes. The center won't be completely baked, but it shouldn't be jiggly. When you use a cake tester in the center, moist crumbs should cling to the stick.
  6. Using the parchment paper overhangs, remove the brownies from the pan and let cool on a wire rack for at least 1 hour (best at room temperature).
  7. Cut into 16 squares, keep in an airtight container for 2-3 days.
