More exciting news! I’m going to France for a couple weeks to visit some family! While I’m there I’ll also be visiting a friend in England but I shall be more or less frequenting all the boulangeries and fromageries in France and eating everything in sight. Not actually, but close. I am definitely making a stop at a Pierre Hermé bakery so I can actually eat one of their famous macarons! Hey, maybe after I have some, I’ll be inspired to create some new flavours when I come back home. It’s been a while since I made me some macarons. I think it’s about time I get back to making these trendy cookies, and experimenting with different shapes! I’ve seen super cute Hello Kitty macarons and I totally want to make some. THEY’RE SO ADORABLE.
But since I’ll be overseas, I can’t guarantee I’ll be able to post as much as usual. Well, my “usual” lately is not super often because of work and TKD but I’ve stockpiled a couple posts that I can slowly release while I’m in Europe. But this is one of the things I made while I’ve been going a little pin-centric on Pinterest. I saw it while pinning, and although the recipe was no longer linked on the tumblr, the recipe was on the pin. Yay! I made these and you’ll be happy to know that they are a healthy alternative to the average chocolate creamsicle =)
These babies are vegan, gluten-free, peanut-free with no added sugar. Whoo healthy AND delicious. And super easy to make! I’ve made jello popsicles in the past, and because the mixture wasn’t very thick, the popsicle sticks (well, in this case, coffee stir sticks) will stand up straight without anything holding them up because the mixture for this is fairly thick. I couldn’t find any uncoloured popsicle sticks in downtown Ottawa, so I had to go for the coffee stir sticks. Not the most sturdy things ever, but they worked out well.
I’ve been adding healthier things to my blog lately because I’m actually considering the whole fact that the amount of sugar I eat may contribute to a risk of diabetes/heart disease/etc. So to nip that in the bud, I’ll be making better food choices. Since I’m already vegetarian, that cuts out a lot of saturated and trans-fats from my diet, I might as well cut some processed foods and sugars while I’m at it. Cheese is going to be the hard one to cut down on. I loooove cheese.
But I’ve been exercising more lately (I’M A YELLOW BELT IN TKD NOW!) and I’m starting to tone up my arms cause they were getting a little chicken-wing-y. It’s sad because I could only do about one full push-up because I have absolutely no upper-body strength. Over the past week, I’ve developed enough muscle to be able to do about 8 full push-ups now. Whoo! Small steps. But anyway, I’ll be adding healthy things and maybe if I finally find some sort of workout other than TKD that I like, I’ll be posting online as well.
Enjoy these popsicles! This recipe makes about 8 full dentist Dixie-cup-sized pops =)
- 3 large over-ripened bananas
- 1 cup coconut milk
- 4 tbsp cocoa powder
- 1 tsp vanilla
- a pinch of salt
- Dixie cups (fewer than 10 for this recipe)
- popsicle sticks
- If you have a blender, shove everything together in the blender and process until smooth. If you don’t have a blender, do as follows:
- Mash the bananas with a potato masher or a fork until relatively smooth.
- Add the cocoa powder and salt and mix in.
- Add the coconut milk and vanilla and mix until incorporated.
- Pour into Dixie cups (you know, like the ones at the dentist) and stick a popsicle stick in the middle.
- Freeze for about 4 hours and they should be ready to eat! Just use some scissors to make a snip on the cup then tear from there to release the deliciousness within.
